Chicken Stir fry - Slimming World Style

Over the last few months my diet has taken a drastic change. My husband decided that he was going to lose some weight and that he was going to join Slimming World. Now being the only other person living in the house (apart from Pugsey) and the one that mainly does the cooking it would be stupid to be making different food for me than Nick. So kind of by accident I have been eating Slimming World meals.


Now obviously I don't count syns and if anything I have been trying to put weight on. So I have been having little extras with my meals but the majority has been the same. Getting out of the habit of eating like a student has been really hard but I feel like we are finally getting into a good routine and learning a lot more about cooking and what sort of ingredients to put with what. Nick has lost just over 3 and a half stone and I seem to have been a lot less ill (touch wood) over the winter months than I usually am, so I think it is doing wonders for my immune system. 

For this recipe I used

500g of chicken breast
5 tbsp soy sauce
Juice of 1 lime
1cm piece of ginger peeled and chopped
3 cloves garlic crushed
2 carrots cut into ribbons
4 spring onions
Half an onion
Mushrooms, bean sprouts and chilli to taste
Noodles

Method

Mix half the lime juice with 1 garlic clove and 3 tbsp soy sauce, add the chicken and leave to marinate.

Spray a large wok with fry light, put on a high heat and add chicken, stir fry until chicken is browned.

Add the rest of the ingredients apart from the noodles. Stir fry for a further 5 minutes.

Add the noodles and stir fry for 3 more minutes.

Not a very comprehensive recipe but it tasted really nice and I kind of made it up whilst I was going along. Obviously you can add in any veg you want, I'm not a massive veg lover so I tend to stick to the basics.
