First Attempt At Macaroons

I decided with Bake Off starting back next week that I would dust off my apron and do a bit of baking this week. Macaroons are always something that I have wanted to try making but have heard so many people say they are not as easy as they look to make, I have never bothered. 


I must admit the mixture did look a bit of a funny consistency on my first batch but after changing my mixer to my handheld everything got a lot easier. It did take some patience but I don't think I did terribly for my first go. I made them orange flavour (only flavouring I had in the house) but there are lots of amazing flavour combos that I found on Pinterest that I want to try next. 

Ingredients
175g icing sugar
125g ground almonds
3 large egg whites
75g caster sugar

For The Filling
150g, butter
75g icing sugar

1. Preheat oven to 160c/140c fan/gas 3. Sift icing sugar and ground almonds into a bowl and set to one side

2. In a clean bowl, whisk your egg whites until they start to form stiff peaks. Start to gradually whisk in the caster sugar until mixture is thick and glossy.

3.Now add any flavouring (1/2tsp) and food colouring (until desired colour) to the mixture.

4.Start to fold half of the almond and icing sugar into the egg white mixture. Fold the rest of the almonds and icing sugar in until the mixture is shiny and thick and spoon into a piping bag.

5. Line a baking tin with baking paper and pipe small 3cm circles. Leave to rest for around 15 mins for a film to form. Bake for 15 mins and then allow to cool before removing them from the paper.

6. Whilst cooling start to make your filling. Beat softened butter and icing sugar together until smooth. Add desired colouring/flavouring and then use to sandwich two half together.

    1. Thank you! They weren't as smooth as I would have liked but after a bit of practise I think they will be much better. Everyone thought they tasted good which is always the main thing haha
