Making Lemon and Chocolate Cheesecake

I had a full weekend of work this week and I really wasn't looking forward to not having a day off. So Saturday after work I decided to pop to Asda and pick up a few ingredients to make a cheesecake. I have made a cake in such a long time I was really looking forward to it. 

When 3 o'clock rolled around Sunday I was so glad to get home and to my cheesecake setting in the fridge. One of my friends called in and we had a lovely cuppa and a slice each (we may have had seconds). I was really please with my first attempt at making cheesecake and was really surprised at how easy it was, especially after I tweaked the recipe to suit my taste.

Just incase you would like to have a go yourself, here is the recipe

200g crushed chocolate biscuits (or any biscuit you prefer, I used double chocolate digestives)
100g unsalted butter, melted
500g mascarpone
325g lemon curd (with a little bit extra to swirl into the top)
Juice of 1 small lemon

Mix the butter and crushed biscuits in a bowl and then press into the bottom of the tin.

Beat the mascarpone, lemon curd and lemon juice in a bowl until smooth.

Spoon on to the biscuit base and level the top. Use some of the left over lemon curd to swirl into the top. 

Leave in the fridge for at least 4 hours to firm up, I left mine over night to make sure it was completely set.
